Peach-Almond Sorbet

4 Peaches
10 Almonds
1/2 cup Club Soda
1/2 tsp Almond Extract
1 tbsp Vodka*
2 tsp Simple Syrup

In a food processor, combine and puree peaches and almonds.
Stir together puree mixture, club soda, almond extract, vodka, and simple syrup.
Freeze in ice cream maker according to directions.

*In this case, the vodka serves a very practical purpose.  It allows the sorbet to keep a nice, slushy texture without freezing into an unmanageable block of ice.

1 peach
1 bottle chilled White Wine
1/2 cup Brandy
1 cup Club Soda
1 tbsp Sugar
Peach-Almond Sorbet

Thinly slice peach and submerge in 1/4 cup of brandy and allow to soak for at least 30 minutes.
In a glass pitcher or bowl, dissolve sugar in other 1/4 cup of brandy.
Add white wine.  Top off with club soda.  Add peaches. Stir.
Serve in a rocks glass with two scoops of peach almond-sorbet.
