Peach-Almond Sorbet
Ingredients
4 Peaches
10 Almonds
1/2 cup Club Soda
1/2 tsp Almond Extract
1 tbsp Vodka*
2 tsp Simple Syrup
Directions
In a food processor, combine and puree peaches and almonds.
Stir together puree mixture, club soda, almond extract, vodka, and simple syrup.
Freeze in ice cream maker according to directions.
*In this case, the vodka serves a very practical purpose. It allows the sorbet to keep a nice, slushy texture without freezing into an unmanageable block of ice.
